Tiny Toms Bruschetta



  • 1 punnet of FlavourBites Tiny Toms

  • 1 or 2 Flavorite Truss Tomatoes (sliced)

  • 80g marinated goat's cheese

  • 1 tbs olive oil

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 2 tsp fresh rosemary leaves, chopped

  • 2 tsp brown sugar

  • 8 thin slices crusty Italian bread

  • Chopped fresh basil or parsley


  1. Preheat grill to high.

  2. Sprinkle rosemary, brown sugar and 1 tsp of oil over the sliced truss tomatoes and place on a baking tray to grill for 15-20 minutes.

  3. Remove the tomatoe slices and rest on side.

  4. Place bread in a single layer on another large baking tray. Brush both sides with remaining oil. Grill for 2 minutes each side or until toasted.

  5. Spread toasts with goat's cheese. Top with the grilled slice tomatoes and fresh Tiny Toms.

  6. Serve drizzled with extra oil.
